Wonderland veggies

Our last veggie box had one of those crossbred veggies in it.    It was a cauliflower.  But orange.  Fit for Alice to be served at the Mad Hatter’s tea party.  The breeders boast that the orange cauli has 25% more vitamin A than it’s white brother but I like it because of the whimsy it adds to a veggie dish.

Just like a cauliflower… only orange!

I washed and chopped it along with green beans, potatoes and yams.

Heated olive oil and a range of aloo gobi-esk spices in the pan until bubbly. (I used cardamon, coriander, cumin, turmeric, paprika, chili powder, garam masala and cajun spice but you can use whatever is in your cupboard).

I added the veggies hardest to softest on a medium heat adding a little water as I go so they don’t stick to the pan.

We ate it with salmon.

Ana needed a little coaxing with the salmon tonight but she had a second serving of the veggies. Perhaps I should have cut the pieces a little smaller for her but she was happy to nibble her way through.

There’s even a bit leftover for lunch tomorrow!

    I like purple carrots – although I was surprised to find out that they were the original colour and that orange ones are the hybrid version!
    Mmm – I’ll have Ana’s salmon!

      Do you know I was just reading about the history of carrots the other day?! You’re right the purple was one of the originals and so was the yellow carrot.

      And Jose had the leftover salmon. Sorry, too late.

  2. I served a dish of steamed lime green brocciflower, with purple cauliflower and orange cauliflower one evening. I thought it looked amazing, but Iggy had trouble with the purple one, not because of its flavour (it didn’t get that far) but because of its appearance. Pity. I love multi-coloured dinners.

      I love multi-colored dinners too! Asparagus green, purple and white spears look cool together, as do the same three colours in carrots too. Maybe you should have told Iggy it was marmalade flavored?

      Thank you! I’ve made something similar and chucked in some garbanzo beans for protein and that was pretty good too.
