Guest Recipe: Pea and Ham Soup

I’ve asked some friends to share a favourite recipe full of veggie goodness.  To kick off, My super creative Brisbane blogger friend, Bree from Me and My 2 Guys is sharing her Pea and Ham Soup.

You’ll need:

  • 1 ham hock or bacon bones or leg ham bone (ham hock is the best as you will get the most meat)
  • Veges to taste but I generally use:  1 stick of celery, 1 carrot, 1 turnip, 1 swede, 1 onion, 2 potatoes, 1 parsnip.
  • 1 packet of soup mix (includes dry split peas and beans etc)

Peel and cut the veges into bite sized pieces.  Place in a large stock pot with the ham hock and split pea mix (you may need to rinse the split pea mix first as per packet instructions).  Fill with water.

Bring to the boil and simmer on the stove for at least 2 hours.  Check to see if the ham is falling off the bone and the peas are soft.  The soup should have reduced by at least 1/3 and have gone cloudy and thickened.  If not thick and luscious then let it simmer a bit longer.

I like to shred the ham and remove the bones from the pot before serving.  This soup keeps in the fridge or freezes really well.  To reheat just add a tiny bit of water and heat either in the microwave or on the stove.

    Yummy. Soups are a great way to use up leftover veges.

      Totally. Something like this is very forgiving on quantities and what kind of veggies too so great for any season and anything you have around.
